TOUR STOP #2: Ingredient Assembly
Department of Weights and Measures
Various types of weighing machines along with milling, grinding and measuring equipment fill the Ingredient Assembly Department. Employees are busy checking, weighing, measuring and processing ingredients. Hand trucks and carts pass by as they deliver items to the Mixing Department. From this point on in the bakery, hair nets are worn and no jewelry is allowed. Also, pockets must be sewn shut. Most bakery personnel wear special uniforms every day. These precautions are taken to keep the bakery as sanitary as possible and to minimize the risk of product contamination.
In a commercial bakery, recipes are called formulas — and it takes a complete department to gather all of the ingredients listed in a formula. The Assembly Department is responsible for preparing the various items needed, including retrieving them from storage, preparing them for use and delivering them to the mixing department. A production schedule tells the staff of the Assembly department when items are needed and helps them calculate the correct quantities. They place order with the Warehousing department which sends them everything they need to make America’s Best Cookies!
